Taco Tuesday

Here’s an idea for you in honor of Taco Tuesday! (See my prior post for the cole slaw recipe.) Pick up some of your favorite crunchy taco shells (I used an organic white corn.) Fill them with:

  • Chopped romaine lettuce

  • Thinly sliced scallions

  • My cole slaw (see Sunday’s post for the recipe)

  • Vegan taco “meat” (I used @theverygoodbutchers taco stuffing ~ amazing…)

  • Shredded non-dairy cheddar


Crunchy, flavorful, satisfying! Of course you can also throw it all in a bowl instead. Break a taco shell or tortilla chips into pieces, add diced avocado and a fruited salsa and you’ve got a delicious taco salad.
