I saw it all the time, but never underestimate the power of a good salad.
I get it. It's much more tempting to reach for a sandwich or a bagel...or chocolate! Salad means you chop and prep and see what's on hand.
Sometimes it takes a little more effort than others but it's worth it.
This salad was a what I call a "kitchen sink" salad - you take what you've got and you throw in everything but the kitchen sink.
3/4 cup bibb or Boston lettuce, chopped
2 large radishes, sliced
1/3 cup alfalfa sprouts, chopped
2 TBSP fresh dill
1/2 cup shaved and chopped cauliflower
Toss all of that together and then:
Squeeze in the juice of 1/2-3/4 lemon
Add 1 1/2 TBSP tahini
Drizzle pomegranate syrup in circles over the top
Mix until the juice and tahini are well combined. Drizzle a little more pomegranate syrup, and a dusting of sesame seeds and sumac. Add your favorite lean protein and you have a delicious, healthy, vibrant meal.
