Roasted Cauliflower with Dried Cherries and Garbanzo Beans

Preheat oven to 450 degrees.


You will need:


1 small organic cauliflower, florets only

1 shallot, chopped

1/2 can organic garbanzo beans

2 TBSP chopped fresh dill

1/4 cup raw, unsalted pistachios

1/4 cup tart cherries

Generous drizzle of extra virgin olive oil

Generous sprinkle of za’atar

Large pinch of kosher salt

Juice of half a lemon


On a lined baking tray, spread out the cauliflower and sprinkle or drizzle the remaining ingredients evenly across the pan.


Roast for 15 minutes, spray with olive oil, and roast another 10-15 minutes until golden, tender, and charred slightly on the edges.


For a creamier dish, mix in a heaping spoonful of vegan sour cream. Serve hot.
