Fire up your grill
Slice a napa cabbage in quarters
Shuck some corn (or let someone else do it for you...)
Drizzle both with extra virgin olive oil
Add your favorite seasoning (dried chives, parsley, salt, red pepper flakes, Old Bay...whatever)
Grill 'til they start to char
Drizzle the cabbage with a little extra virgin olive oil and balsamic glaze
Schmear some plant-based butter on the corn
...Serve!
Leftovers? No problem!
Chop up that cabbage
Shear the kernels off the corn
Add diced cucumber and avocado
Toss in some cannellini or garbanzo beans if you’re craving a little protein
Mix with white balsamic or red wine vinegar and a bit more oil
Throw in some fresh herbs if you have...
Mangia!
