1 package organic coleslaw mix
2 Kirby cucumbers, diced
2 radishes, diced
1/4 cup parsley
1/4 cup cilantro
1 scallion, chopped
1 avocado, diced
7 ounces extra firm tofu, cubed
Juice of 1 lemon
Kosher salt to taste
Mix and serve!
