Detox Cabbage Slaw

This is such a refreshing, crunchy, nutrient-dense slaw. You can top it with extra lean protein or slivered almonds for an added health punch.



1 package organic coleslaw mix

2 Kirby cucumbers, diced

2 radishes, diced

1/4 cup parsley

1/4 cup cilantro

1 scallion, chopped

1 avocado, diced

7 ounces extra firm tofu, cubed

Juice of 1 lemon

Kosher salt to taste


Mix and serve!
