Chia Pudding

I love a healthy grab-n-go and this little bowl of superfood goodness is perfect!


1/2 cup non-dairy milk

1 TBSP chia seeds

1 TBSP shredded, unsweetened coconut

1/2 cup organic blueberries

2 chopped dates

1 TBSP sliced almonds

1 tsp honey

1 TBSP nut butter


Fill a cup or mason jar with the milk and chia seeds and let it sit overnight. The next morning, once the pudding has firmed, add the toppings and enjoy or seal in your mason jar and enjoy for lunch on the go or the next day’s breakfast.
